Besides bringing sun, light and great vibes, European summers bless us with a great diversity of flowers and fruits, among these strawberries. When it is strawberry season we enjoy the pleasure of visiting the strawberry fields and picking/eating as much as we want.
I love this recipe which is twice as enjoyable with fresh summer strawberries. It looks very impressive and is a crowd pleaser. Ideal as a make ahead dessert. Your family and guests will be pleased and ask for more!
INGREDIENTS
Fresh strawberries Mascarpone cheese Powdered sugar A bit of Vanilla, Cardamom & Black Pepper
To decorate: Fresh Mint leaves & Coloured sugar
PREPARATION
- Mix Cream cheese, powdered sugar, vanilla, cardamom and pepper
- Make an incision on the top of each strawberry - Using a teaspoon, scoop out a bit of the strawberry and replace it with the cream - Before serving decorate with coloured sugar and fresh mint leaves - Can be kept in the fridge for a couple of days - in a closed container
